The values 'series' and 'number' are not part of the 'Dublin Core' specification, so I think they would need to be added using custom elements. Obviously the information can be entered manually, but it would be handy to be able to specify it when first creating the *.epub. These data are very useful to aid with ordering, especially if the title is just one entry from a long series of books. However this does not include the 'series' and 'number' values. When an *.epub book is imported into calibre it reads most of the key metadata values correctly from the 'content.opf' document stored within the epub (actually a renamed *.zip file) container.
